We have taken honey, gift of the bees, then delicately crafted this honey wine you will not be able to get enough of. Starting with a blend of Myanmar jujube honey and Malaysian acacia honey then going through a refined fermentation process. The result is a delightful floral bouquet with just the right amount of sweetness. Honey, purified water, yeast, citric acid; nothing else added. Add ice and share this amazing treat with friends!

Tasting Notes

A balanced, easy to drink honey wine that is not too sweet. A soft bouquet on the nose of ripe bananas and warm caramel. Peach nectar and a hint of dark maple syrup. Clean finish. Great on its own, or for use to support a more sophisticated drink.

Altitude: 1480 metre 

Alcohol Content: 13%

Service:  Serve at 5°C - 11°C.

Method

Honey is combined with ultra-pure water. No other additives for fermentation. No sulphites. 10-15 days fermentation controlled at 16°C - 18°C. When the target alcohol and sugar content is attained, use of lysozyme combined with dropping the temperature close to ~2-4°C for halting fermentation. The product is then chilled for a further 5-7 days. Mechanical clarification using Bentonite; no chemicals used. Additional 0.45μm mechanical filtration prior to bottling.
