We make plum syrup from Nanko Ume Plum grown in Wakayama Prefecture, which is a leading producer of plums in Japan. We wash plums very carefully, and remove each one of the calyxes with hand, and then preserve the plums and crystal sugar in a barrel. It takes a lot of time and care.
