Old Stables is an introduction to the Old Kempton house style. It is an approachable whisky suited to all types of drinkers and matches well with food. The whisky exhibits the Old Kempton spirit style of fruity and floral flavours balanced with a rich malt and utilises all cask types to produce a well-rounded and consistent whisky from release to release.

The Pinot 46% presents the Old Kempton house style through the prism of Tasmanian Pinot Noir casks. The pinot casks produce a bright vibrant style of single malt whisky that captures the blackcurrant, mulberry, and spiced cherry flavours of the wine and balances them with a beautiful depth of malt and oak. The Pinot Noir casks are matured for a relatively short period of time (4.5 years) to maintain the vibrancy and avoid the whisky becoming dominated by tannins that make it unpleasantly dry and astringent.

The Solera Release utilises a method common in the Spanish Sherry industry to blend spirit from different years to create a richer more complex release.The Solera system sees the partial volume of the bottom cask, or casks, released as a batch. These casks, or in our case cask, are then topped up by casks above them in the system that hold already maturing spirit.The benefit of this system is that each batch released will contain some percentage of whisky from each time the cask has been filled for the entire life of the system. The Old Kempton Solera Cask is a 500L Portuguese Port Cask that has been operating since 2018, it is rich and luxurious whisky ideal for matching with dessert of cigars.

Tawny is the classic cask style that Tasmanian whisky built its name on over the last thirty years. These casks are predominately sourced from South Australia and the sweet fortified wines bring plum pudding and spice notes to the single malt whisky. These tawny casks are matured for a longer period of time (5.5-6 years in 100L casks) to make sure optimum integration between the cask and the spirit is achieved.

The Coachhouse is the cask strength expression of the Old Kempton house style. To create this whisky, a small number of casks are selected that are uniquely suited to being drunk at Cask Strength - casks that when kept at high abv provide a depth, length, and complexity of flavour that can only be achieved from a good cask strength whisky. The alcohol is not overpowering and is there to provide structure to the flavour, so expect &nbsp;toffee, almost overcooked Anzac biscuit, and rum and raisin chocolate.
